Arctic Char with Tomato Herb Sauce

Arctic char is a omega-3 rich fish that looks a bit like salmon but tastes milder. Since it has a bit more fat, it also tends to be more forgiving while cooking! Here I am showing you how to make a lovely arctic char with tomato herb sauce, served with roasted baby potatoes and asparagus. So absolutely delicious!

Ingredients

  • 1/2 cup olive oil
  • 4 garlic cloves, sliced
  • a mix of fresh herbs (I used sage, basil, chives, thyme)
  • 1/4 cup white wine
  • cherry tomatoes, halved
  • Arctic char fillets, cut into serving portions (about 6oz each)
  • Baby potatoes
  • Asparagus
  • a tbsp of unsalted butter
  • freshly ground pepper and any salt free seasonings of your choice

Method

Make the sauce

  • Warm up the olive oil in a saucepan over medium to low heat. This is a low and slow process so watch out.
  • Add in the garlic, and let cook for a few minutes. We do not want it to brown.
  • Add in all the herbs, the tomatoes and the wine and bring to a slow simmer. Let it cook for about 10 minutes.
  • Take off the heat and set aside. The sauce is done.

Prepare the sides

  • Halve the potatoes and arrange on a baking sheet tray along with the trimmed asparagus.
  • Drizzle with olive oil and a good amount of freshly ground pepper. Add in any other favorite spices of your choice. I personally love the chipotle chili powder on the potatoes!
  • Bake the veggies in the oven at 375F for about 15 minutes. Take out the asparagus and continue to roast the potatoes for another 15 minutes. Since oven temperatures vary, test till they are all done.
  • Remove from oven and set aside.

Bake the fish

  • Arrange the arctic char fillets on a baking sheet.
  • Drizzle with a little olive oil and some salt free seasoning (like Mrs. Dash). Put a pat of unsalted butter on each fillet.
  • Bake in the oven at 375 for 8 min. Again test the fish since your oven may run hotter or cooler. Trick is to get the fish to be just flaky but not overcook it to dryness.

To serve, place the fish on a plate. Pour a generous amount of sauce over the fish. Arrange the potatoes and asparagus on the plate. The gorgeous plate of arctic char with tomato herb sauce, roast potatoes and asparagus. This is next level gourmet!
