You know you have a winner when a standalone salad can also work as a side, when it can go with a summer cookout, a southwest meal or even a traditional Indian menu. Versatile enough for you? This is the fabulous black bean salad. So colorful and so tasty, you forget it’s really good for you too!
Ingredients
- 2 cups of black beans, no salt added
- 1 cup corn kernels, thawed if using frozen
- red and green bell peppers, chopped
- 1 small red onion, minced
- 2 garlic cloves, minced
- 1 jalapeno, sliced
- Juice of 1 lemon
- 1 tomato, chopped
- a handful of cilantro, finely chopped
- 1/4 cup roasted peanuts
- 1 tsp cumin powder
- 1/2 tsp coriander powder
Method
- Combine all ingredients in a large bowl. Toss together to combine.
- Let the salad rest in the fridge for about an hour. This allows all the flavors to develop and for the lemon to work into the other ingredients.
- Taste and adjust any seasonings as needed.
