Black Bean Salad

You know you have a winner when a standalone salad can also work as a side, when it can go with a summer cookout, a southwest meal or even a traditional Indian menu. Versatile enough for you? This is the fabulous black bean salad. So colorful and so tasty, you forget it’s really good for you too!

Ingredients

  • 2 cups of black beans, no salt added
  • 1 cup corn kernels, thawed if using frozen
  • red and green bell peppers, chopped
  • 1 small red onion, minced
  • 2 garlic cloves, minced
  • 1 jalapeno, sliced
  • Juice of 1 lemon
  • 1 tomato, chopped
  • a handful of cilantro, finely chopped
  • 1/4 cup roasted peanuts
  • 1 tsp cumin powder
  • 1/2 tsp coriander powder

Method

  • Combine all ingredients in a large bowl. Toss together to combine.
  • Let the salad rest in the fridge for about an hour. This allows all the flavors to develop and for the lemon to work into the other ingredients.
  • Taste and adjust any seasonings as needed.
