Chilled Corn Soup

A hot summer day needs a chilled corn soup. This is an absolutely decadent winning recipe that is so easy to put together. I have simplified the recipe to use minimum fuss ingredients. You could, of course, choose to make it a bit more interesting by using fresh corn ears but why?!! I came back from my recent trip to California with some super fresh kaffir limes and leaves from a friend’s backyard. So of course, I had to use them in this recipe. Don’t worry if you do not have access to kaffir lime leaves, you can just use a zest of a lime instead. This is a fantastic soup that just happens to be low sodium, gluten free, and vegan too!

Ingredients

  • 1 small onion, chopped
  • 1 medium potato, chopped
  • An inch of fresh ginger, chopped
  • A bag of Trader Joe’s frozen roasted corn
  • About 6 kaffir lime leaves (these are optional but make the flavor so intense! You can substitute with zest of the regular lime)
  • Zest from 1 kaffir lime
  • 1 fresh lime, juiced
  • 1 can of light coconut milk (or use 1/2 a can of regular coconut milk)
  • Turmeric powder
  • Freshly ground black pepper 
  • Cilantro for garnish

Method

  • Sauté the onions and ginger in a stockpot using about 2 tablespoons of oil.
  • Add the potatoes, the kaffir lime leaves, the zest from the kaffir lime, a tsp of turmeric, and enough water to just cover the potatoes. Cover and let cook till the potatoes are soft.
  • Then add the frozen corn, the coconut milk and let simmer till the flavors all come together (about 10 minutes or so). If you do not have access to Trader Joe’s, just grill some corn and shave off the roasted kernels. Also throw in the whole corn ears into the stockpot while simmering to get all the corn flavor. Remove before blending though!
  • Let cool, remove the kaffir lime leaves, and blend till silky smooth.
  • Add a generous squeeze of lime juice.
  • Add a pinch of salt to each bowl. Serve garnished with cilantro.

That’s all. This chilled corn soup can be as thick or thin as you like and as rich or light as you like. Just vary the water and coconut milk to get the desired consistency. Must serve chilled. So delicious!
