There is something magical about the combination of sweet mango, spicy ginger and the umami from soy sauce. I am using the Low Sodium Soy Sauce Substitute from Sans Salt. Believe it or not, I came up with this awesome recipe for Mango Ginger Chicken as I was staring into the fridge! Sometimes there is just no stopping the creativity!! Bonus, there is next to no hands on prep work!!
Ingredients
- Trader Joe’s Mango Ginger Gourmet Chutney (also available on Amazon)
- Lola’s Original Hot Sauce
- Freshly ground black pepper
- Ginger, minced
- Garlic, minced
- Low Sodium Soy Sauce Substitute
- Boneless Skinless Chicken Thighs
Method
- Marinate the chicken in the ginger, garlic, mango-ginger chutney, Lola’s hot sauce, the low sodium soy sauce substitute and the freshly ground black pepper.
- Let it sit in the fridge for at least 4 hours so the flavors really get into the chicken.
- Bake in the oven at 450F for about 15 minutes.
- Drain the liquids from the sheet pan and continue to bake for another 5 minutes to get a slight crust on the chicken.
That’s it. You are done! The Chicken tastes great as is. I did not need any salt.
