I have always loved the idea of playing with ingredients from different cuisines and seeing what happens when you bring them together! Here, I am really pleased to bring you Paneer Fajitas. We all know and love fajitas but they can be a super high sodium meal when ordered at restaurants. My version is very low-sodium with all the right flavors. Paneer is an Indian soft cheese that clocks in at only 5mg of sodium per oz. This is a perfect protein to use for a tasty vegetarian take on the classic fajitas. Try it and I promise, you will keep coming back for more!
Ingredients
- Paneer, cut into strips
- 3 Guajillo Chillies
- 1 medium red onion, sliced
- 4 garlic cloves, sliced
- A handful of unsalted roasted walnuts
- 2 tbsp of raisins
- red and green bell peppers, sliced into strips
- 1 large jalapeno pepper, sliced
- Chipotle pepper powder, to taste
- 2 tsp cumin powder
- 2 tsp Spicewalla Carne Asada spice rub (or other fajita seasoning of your choice)
- 1/2 Bag of frozen roasted corn
- 1 Avocado, sliced
- Sour cream
- cilantro, chopped
Method
- Heat up about 3 tbsp of oil in a sauté pan over medium heat.
- Add the guajillo peppers, the garlic, red onions and sauté till they soften.
- Throw in a handful of roasted walnuts and raisins. This adds the surprise elements of crunch and a touch of sweetness to the fajitas and is a total game changer. Trust me!
- No add the colorful bell peppers and continue to sauté for a couple of minutes.
- Add in the corn and the paneer.
- Spice it up with cumin, chipotle pepper powder and the fajita seasonings.
- Let it all cook together for about 5 more minutes till the vegetables are just done.
- Take it off the heat. The fajitas are done.
Serve It Up
To serve, set up the fajita buffet style and let people help themselves. I used:
- Corn Tortillas (well – it is the lowest sodium tortilla you can buy!)
- Avocados
- Lemon wedges
- sliced jalapenos
- sour cream
I kept it simple since this was a weeknight meal. You can make it a heartier meal with other add-ons like salsa fresca, spanish rice, beans etc. Bring out your inner Tex-Mex chef! Paneer fajitas are a guaranteed hit!
