I’ve recently started ordering organic produce from Misfits Market and so far it’s been great! Last week, I got a taste of summer in my order with zucchini and yellow squash along with sweet potatoes. Usually I make my quinoa salad in the summer when my garden produces more zucchini than I know what to do with. So it was a nice surprise to get a taste of summer in the middle of winter!
Ingredients
- 1 cup dry quinoa, cooked per package
- 2 medium sweet potatoes, cubed and boiled to just tender
- 1 large or 2 medium Zucchini
- 1 large or 2 medium Yellow squash
- 1 each Red and Green peppers
- 1 Cucumber
- Olive oil
- Mrs Dash original salt-free seasoning blend
- Lemon
- Salt and Pepper
Method
Once you have the cooked quinoa, the boiled sweet potatoes and the vegetables all chopped, this is a 5 minute recipe! Otherwise, done in parallel, it is less than 25 minutes!! Tip: When cooking the quinoa, add some Mrs. Dash seasoning and olive oil to the water before adding the dry, rinsed quinoa. The added flavors make the quinoa taste great!
- Sauté the sliced zucchini, yellow squash, the chopped red and green peppers in a couple of tablespoons of olive oil.
- Sprinkle a generous amount of Mrs Dash salt-free seasoning all over the veggies and cook till just starting to soften.
- Add the quinoa, the sweet potatoes, the cucumber and a generous squeeze of fresh lemon juice.
- Either add salt and pepper now to taste or wait to salt your plate.
- Garnish with fresh cilantro and enjoy!
