Salmon Dinner

This is a last minute dinner that came together in 30 min, based on what was in the fridge/freezer. Sometimes magic does happen under pressure!

Salmon sprinkled with the Organic No-salt Seasoning from Costco, lime juice and unsalted butter baked in the oven at 400F for 8min.

Honeynut squash, halved and roasted in oven with olive oil, ground pepper and a sprinkling of brown sugar also at 400F for 30min. For those who have not tried it, honeynut squash is very seasonal (available now!) and is a miniature version of butternut squash but sweeter. Yum!

Angel hair pasta tossed with sautéed garlic, red bell pepper, zucchini and cherry tomatoes. Only spices were ground pepper, Mrs Dash Italian Medley seasoning blend and a handful of parsley.

This plate has only 318 mg of sodium all of which came from the frozen salmon filet. No added salt while cooking! The trick is to use lime, tomatoes, herbs and no-salt seasoning to amp up the taste. If you plan it right and get fresh salmon, it can be around a 100mg of sodium plate!! Now that’s a delicious win!
