This was the year – 2020! It was to be a year of milestones – we were supposed to become empty nesters, start traveling the world without worrying about school calendars, celebrate graduations, multiple family weddings, milestone birthdays and anniversaries! Well, as we all know that is not how things went down. We all stayed home and cooked. A lot! Not truly a hardship since we all love food and are always happy to experiment.
Just as we were getting ready to leave on a long road trip to drop our daughter off to college, my husband was asked to go on a low sodium diet for health reasons. Okay, I thought, we can do this. After all I am already gluten and lactose free. How hard can it be to limit sodium? Turns out this is a challenge especially if you are not at home. We sort of jumped into the deep end since we started this on the road but we did learn a lot on the fly. There is a true lack of information in restaurant menus regarding sodium levels and we were constantly googling our way through each meal.
Once we got back home, we jumped into meal planning and prep from first principles and found it so easy to limit sodium. Restaurants use salt both as a preservative as well as to enhance taste. Digging into each menu item to decide what to eat is difficult especially when they are not used to such questions. So we learnt how to order out, how, what and where to shop for ingredients, how to modify recipes and in essence how to live the low sodium life.
