Thai Green Curry with Salmon

Recently I have been playing a lot in the Thai flavor profiles. It hits the spot every single time! Here’s my take on a Thai Green Curry with Salmon. This recipe just looks complicated – it is actually deceptively simple! How can you go wrong when you combine salmon and Thai green curry over a bed of rice? So flavorful! So delicious!! Also, low sodium, gluten free, and chock full of protein, omega-3 and all the healthy nutrients from the vegetables. Need I say more?

Ingredients

  • Mixed Vegetables, cut into bite sized pieces (I like colorful bell peppers, sweet potato, green peas)
  • Aromatics (Basil, Thai Basil. Kaffir lime leaves, Kaffir lime zest or zest from a regular lime)
  • Salt Free green curry spice from the Savory Spice Shop
  • Can of low sodium coconut milk
  • Salmon filets (about 6oz per person)
  • Mrs Dash Original seasoning
  • Freshly ground black pepper
  • Unsalted butter
  • 1 cup rice (brown/white your choice)

For those with no access to the Savory Spice Shop, here’s what goes into the all important green curry spice mix. Ingredients: Green and red chiles, galangal, cumin, coriander, shallots, garlic, cilantro, lemongrass, Lampong pepper and makrut lime leaves.

Method

  • Cook some plain rice (white or brown) using your preferred method.
  • While the rice is cooking, make the green curry.
  • In a large saute pan, add a tablespoon of oil, 2 tablespoons of the green curry powder and let is cook in the oil on medum eat to release the flavors.
  • Now add the vegetables, the kaffir lime leaves, the Thai Basil, the coconut milk, and bring to a boil. Lower the heat and let simmer, covered, for about 15 minutes till the sweet potatoes are cooked. Adjust any spices as needed. Discard the kaffir lime leaves.
  • Sprinkle some freshly ground black pepper, any salt free seasoning (I use Mrs Dash original blend), a squeeze of fresh lime, and a pat of butter on top of each salmon filet. Roast the salmon at 400F for 8 minutes. Do not overcook the salmon!
  • Assemble each bowl as follows. Spoon some rice into a bowl. Place a salmon filet on top of the rice. Ladle a generous portion of the Thai Green curry over the top. You want some of the delicious curry sauce to go down to the bottom of the bowl and flavor the rice as well as the salmon.
  • As always, Salt the Plate or in this case, bowl!

Thai Green Curry with Salmon is an absolutely delicious way to get in some healthy fish and a lot of vegetables too!
