White Beans and Broccolini

White beans and Broccolini is a match made in heaven! I have been trying out new or unusual vegetables each week on my trips to the grocery store. This week I picked up some broccolini since they looked so fresh with no idea what I was planning to do with it! So glad I did!! There are many types of white beans and they all work here although Cannellini beans are my favorite. The garlic and lemon really make this substantial white beans and broccolini dish sing! Serve with garlic bread or a simple pasta. Delicious!

Ingredients

  • Olive oil
  • 3 cloves garlic, crushed
  • 2 cups of cooked white beans (low sodium canned is ok!)
  • 1 bunch of fresh tender broccolini, with any thick ends trimmed
  • 1 lemon, juiced
  • Freshly ground black pepper

Method

  • Add about 2 tbsp of olive oil to a large sauté pan, over medium heat.
  • Add the garlic and let cook for a minute. Take care not to burn the garlic.
  • Add the broccolini and sauté for about 4-5 minutes.
  • Add in the cooked white beans and continue to cook for a few more minutes. If it looks too dry, you can add about 1/4 cup of water.
  • Take the pan off the heat. Add in the juice from the lemon and a generous amount of freshly ground black pepper.

I did soak dry Cannellini beans overnight and cooked it the next day. However, I recognize that this may be a tall order for some who are tight on time. No worries. Make sure your pantry is stocked with a whole variety of low sodium (or no salt added) beans and you are in business! White beans with broccolini is such a delightful combination! I served it with a simple pasta tossed with roasted cauliflower. It will be perfect with some garlic bread too! As always, I did not add any salt, so don’t forget to salt the plate!
