There are omelettes and then there are Indian Masala Omelettes. Full of vegetables, herbs and spices, these omelettes mean business when it comes to flavor! Just line up all the ingredients, set up your omelette station and either have everyone come and make their own or make them on demand! Either way, this is an easy winning breakfast/brunch idea. These are very easy to tailor to individual preferences. Add some colorful bell peppers or even some shredded cheese if you like. Sometimes, I like to add some fresh spinach. Basically whatever I have on hand! Turmeric used in conjunction with black pepper results in better absorption of the Curcumin. Loads of healthful ingredients in here!
Ingredients
- Red onions, chopped
- Green chillies, minced
- Tomato, chopped
- Freshly ground black pepper
- Any salt free spice blend (like Mrs. Dash original)
- Turmeric
- chili powder (I like the mild smoky Chipotle chili powder)
- Cilantro, chopped
- Eggs (2 per person)
Method
- Start with your favorite omelette pan on medium heat. Add a couple of tablespoons of a neutral oil. Add about a tbsp of chopped onions and about 1/2 tsp of the minced green chilies. Let the onions cook till they are brown.
- Now add about a tbsp of tomatoes. Let cook for a minute.
- Beat 2 eggs for each omelette. Now add all the spices to the beaten eggs.
- Pour over the vegetable mixture. Add the chopped cilantro.
- Let the omelette cook for about 3-4 minutes, covered with a lid. No need to flip.
- Fold the omelette over from 2 sides and slide onto a plate to serve.
- Serve these Masala Omelettes with some low sodium toast, and some no salt added ketchup. Yummy!
