Chicken Tacos

Here’s a quick answer to the dreaded “Whats dinner?” question. All you need are some of the basic ingredients and you can pull together these chicken tacos in about 15 minutes! They are light and fresh and so delicious!

Salsa Fresca

  • 1 medium red onion, chopped
  • 2 jalapeños, chopped
  • 1-2 cloves garlic, minced
  • 2 tomatoes, chopped
  • A generous handful of cilantro, finely chopped
  • Freshly squeezed juice from 1 juicy lime
  • a dash of red wine vinegar
  • a dash of olive oil

Mix together all ingredients and set aside.

Chicken

  • Marinate the chicken tenders in the Al Pastor spice rub or whatever spices you like. A simple cumin, black pepper, chili powder, and garlic powder combination works too. Let it sit for 5 minutes while you get all the other ingredients for the toppings etc.
  • Cook the tenders in a heavy bottom sauté pan on medium heat in a couple of tbsp oil. Turn after 5 minutes. Cook for another 4-5 minutes till the chicken is cooked. This is fast so watch out not to overcook!
  • Take the chicken off the heat and cut into slices for the tacos.

Serve It Up

  • Warm up the tortillas in a hot cast iron pan. You may or may not choose to use a small amount of oil while heating the tortillas.
  • To plate up the tacos, start with the tortillas. Add a few pieces of sliced chicken on each tortilla. then add a couple of spoons of the salsa fresca and a dollop of sour cream on top. Serve with the sliced avocado, lime wedges and jalapeno slices.

These chicken tacos are deceptively simple but taste so delicious!!
